1. Vegetable oil - 1 tablespoon
2. Boneless, skinless chicken thighs, cut into bite-sized cubes - 3 (5 ounce)
3. Onion, chopped - 1 large
4. All-purpose flour - ¼ cup
5. Water - 4 cups
6. Skin-on cubed potatoes - 3 cups
7. Diced carrot - 1 cup
8. Chicken soup base - 1 tablespoon
9. Herbes de Provence - 1 tablespoon
10. Diced green bell pepper - ½ cup
11. Chopped button mushrooms - 1 cup

How to cook deliciously - One-Pot Chicken Stew

1. Stage

Heat oil in a deep pan over medium heat. Add chicken and onion; cook and stir until browned, 5 to 7 minutes. Add flour; cook and stir for 2 to 3 minutes.

Add water, potatoes, carrot, soup base, and herbes de Provence. Cover and simmer for 15 to 20 minutes. Add mushrooms and bell pepper; simmer until all vegetables are tender, 10 to 15 more minutes.
