2. Leeks, chopped, or more to taste - 3
3. Yellow onion, chopped - ½
4. Peeled and cubed potatoes, or more to taste - 3 cups
5. Water - 4 cups
6. Vegetable bouillon - 4 cubes
7. Fresh spinach, chopped, or more to taste - 1 bunch
8. Milk - 2 cups
9. Ground black pepper - 1 tablespoon
10. Salt - 2 teaspoons
11. Ground paprika - ¼ teaspoon
12. Chili powder - ¼ teaspoon

How to cook deliciously - Potato, Spinach, and Leek Soup

1. Stage

Heat olive oil in a large soup pot over medium heat. Add leeks and onion; simmer until tender, about 7 minutes. Add potatoes, water, and bouillon cubes. Bring to a boil, then reduce heat and simmer for 10 to 15 minutes.

Stir in spinach and cook until wilted and soft, 5 to 7 minutes. Add milk, pepper, salt, paprika, and chili powder. Let cook for 5 minutes more; adjust spices to taste.
