1. 2 avocados, pitted -
2. 1 c. cooked quinoa -
3. 1 can black beans, drained and rinsed -
4. 2 scallions, sliced -
5. 1 red bell pepper, chopped -
6. 1 c. corn (fresh, frozen, or canned) -
7. 2 tbsp. Extra virgin olive oil -
8. Juice of 2 limes -
9. Kosher salt -

How to cook deliciously - Quinoa-Stuffed Avocados

1. Stage

Scoop out avocados, leaving a small border. Dice avocado and set aside.

2. Stage

Make quinoa salad: In a large bowl, combine quinoa, beans, scallion, peppers, and corn. Add olive oil and lime juice and toss to combine. Season with salt.

Divide salad among 4 avocado halves.
