1. 2 medium zucchini, cut into 1/4-inch slices -
2. 2 tablespoons butter, melted -
3. 1 tablespoon minced fresh oregano or 1 teaspoon dried oregano -
4. 1/4 cup grated Parmesan cheese -
5. Salt and pepper to taste -

How to cook deliciously - Roasted Zucchini

1. Stage

Preheat the oven to 350°F and grease a baking sheet or shallow dish.

2. Stage

Toss the zucchini with butter and oregano in a bowl. Lay it out in a single layer on the baking sheet, then sprinkle with parmesan cheese, salt and pepper. Editor’s Tip: You can use a mandoline or the slicing disk of a food processor for perfectly even zucchini slices.

3. Stage

Bake uncovered for 30 to 40 minutes, until slices are golden brown. Taste, and add more salt and pepper if needed.
