1. Pecans ½ cup
2. White sugar ¼ cup
3. Olive oil ⅓ cup
4. Red wine vinegar 3 tablespoons
5. White sugar 1 ½ teaspoons
6. Prepared mustard 1 ½ teaspoons
7. Garlic, chopped 1 clove
8. Salt ½ teaspoon
9. Fresh ground black pepper to taste ½ teaspoon
10. Green leaf lettuce, torn into bite-sized pieces 1 head
11. Pears - peeled, cored and chopped 3 medium
12. Roquefort cheese, crumbled 5 ounces
13. Avocado - peeled, pitted, and diced 1 medium
14. Thinly sliced green onions ½ cup

How to cook deliciously - Roquefort Pear Salad

1 . Stage

Make the pecans: Combine pecans and sugar in a skillet over medium heat. Cook, stirring gently, until sugar has melted and pecans are caramelized, 5 to 7 minutes. Carefully transfer nuts onto a sheet of waxed paper to cool.

2 . Stage

While the nuts are cooling, make the dressing: Whisk oil, vinegar, sugar, mustard, garlic, salt, and pepper together in a bowl.

3 . Stage

Make the salad: Layer lettuce, pears, Roquefort cheese, avocado, and green onions in a large serving bowl. Pour dressing over top.

Break cooled pecans into pieces and sprinkle over salad.
