1. Shrimp, deveined and chopped - 1 pound
2. Salt and pepper to taste - 1 pound
3. Lime juice - 2 cups
4. Chopped white onion - 1 ½ cups
5. Pickled jalapeno peppers and juice, divided - 1 cup
6. Grated carrots - 2 cups
7. Finely chopped cucumber - 1 cup
8. Finely chopped celery - 1 cup
9. Tomatoes, finely chopped - 1 ½
10. Finely chopped cilantro - ⅓ cup

How to cook deliciously - Shrimp Ceviche Baja Style

1. Stage

Place shrimp in a single layer in a deep serving dish. Add a generous amount of salt and black pepper. Add lime juice and let sit until shrimp become white, about 30 minutes.

2. Stage

Add onion and vinegar from the jalapeno peppers. Let sit 15 to 20 minutes more.

3. Stage

Add jalapeno peppers, carrots, cucumber, celery, tomatoes, and cilantro. Let ceviche sit another 10 minutes.
