Ingredients for - Shrimpo de Gallo

1. Large shrimp, roughly chopped - 1 pound
2. Kosher salt to taste - 1 pound
3. Extra-virgin olive oil - 1 tablespoon
4. Garlic, minced - 1 clove
5. Chili powder - ¼ teaspoon
6. Tomatoes, seeded and diced - 1 ½ pounds
7. Avocado, diced - 1
8. Jalapeno peppers, seeded and minced - 2
9. Finely chopped white onion - ½ cup
10. Finely chopped cilantro - ½ cup
11. Fresh lime juice - 2 tablespoons

How to cook deliciously - Shrimpo de Gallo

1. Stage

Season shrimp with salt. Heat olive oil in skillet over medium-high heat. Add the shrimp, garlic, and chili powder. Cook, tossing occasionally, until shrimp are pink and just cooked through, about 3 minutes. Remove from the skillet and let cool.

2. Stage

Combine tomatoes, avocado, jalapenos, onion, cilantro, and lime juice in a large bowl and season with salt. Add the cooled shrimp and stir to combine. Chill before serving.
