Ingredients for - Contadina® Insalata Minestrone

1. Dry rotini pasta - 4 ounces
2. Contadina® Petite Diced Tomatoes, drained - 1 (14.5 ounce) can
3. White beans, rinsed and drained - 1 (15 ounce) can
4. Diced zucchini - ¾ cup
5. Diced yellow bell pepper - ¾ cup
6. Diced carrot - ¾ cup
7. Frozen peas, thawed - ½ cup
8. Chopped fresh basil - ¼ cup
9. Finely diced red onion - 2 tablespoons
10. Grated Parmesan cheese - ¼ cup
11. Olive oil - ¼ cup
12. Red wine vinegar - ¼ cup
13. CONTADINA® Tomato Paste - 2 tablespoons
14. Chopped fresh oregano - 1 tablespoon
15. Garlic, minced - 1 clove
16. Salt and black pepper to taste - 1 pinch

How to cook deliciously - Contadina® Insalata Minestrone

1. Stage

Cook pasta according to package directions. Drain and rinse with cold water.

2. Stage

Combine pasta and remaining salad ingredients, except Parmesan cheese, in a large serving bowl.

3. Stage

Whisk together dressing ingredients in a small bowl. Pour over salad and mix well. Refrigerate at least 10 minutes for flavors to blend before serving. Serve with grated Parmesan cheese, if desired.
