1. Dry rotini pasta 4 ounces
2. Contadina® Petite Diced Tomatoes, drained 1 (14.5 ounce) can
3. White beans, rinsed and drained 1 (15 ounce) can
4. Diced zucchini ¾ cup
5. Diced yellow bell pepper ¾ cup
6. Diced carrot ¾ cup
7. Frozen peas, thawed ½ cup
8. Chopped fresh basil ¼ cup
9. Finely diced red onion 2 tablespoons
10. Grated Parmesan cheese ¼ cup
11. Olive oil ¼ cup
12. Red wine vinegar ¼ cup
13. CONTADINA® Tomato Paste 2 tablespoons
14. Chopped fresh oregano 1 tablespoon
15. Garlic, minced 1 clove
16. Salt and black pepper to taste 1 pinch

How to cook deliciously - Contadina® Insalata Minestrone

1 . Stage

Cook pasta according to package directions. Drain and rinse with cold water.

2 . Stage

Combine pasta and remaining salad ingredients, except Parmesan cheese, in a large serving bowl.

3 . Stage

Whisk together dressing ingredients in a small bowl. Pour over salad and mix well. Refrigerate at least 10 minutes for flavors to blend before serving. Serve with grated Parmesan cheese, if desired.
