1. Whole chicken, cut into pieces 1 (3 pound)
2. Salt to taste 1 (3 pound)
3. Ground black pepper to taste 1 (3 pound)
4. Paprika 1 teaspoon
5. All-purpose flour 1 cup
6. Vegetable oil for frying 1 quart

1 . Stage

Season chicken pieces with salt, pepper, and paprika. Roll in flour.

Heat oil in a deep-fryer or large saucepan to 375 degrees F (190 degrees C).

Lower chicken pieces carefully into the hot oil in batches. Fry until golden, turning once, about 15 to 20 minutes. An instant-read thermometer inserted near the bone should read 165 degrees F (74 degrees C). Transfer to a paper towel-lined plate to drain. Repeat with remaining chicken.
