Ingredients for - Southern Stir-Fry

1. Vegetable oil - 1 tablespoon
2. Black-eyed peas, rinsed and drained - 1 (15 ounce) can
3. Finely chopped red onion - 1 cup
4. Frozen corn - 1 cup
5. Cooked white rice, cold - 1 cup
6. Chopped fresh thyme leaves - 1 ½ teaspoons
7. Garlic salt - ½ teaspoon
8. Cayenne pepper - ⅛ teaspoon
9. Lightly packed fresh spinach leaves - 2 cups

How to cook deliciously - Southern Stir-Fry

1. Stage

Heat a wok or 12-inch skillet over medium-high heat. Add oil and rotate wok or skillet to coat the sides.

2. Stage

Add black-eyed peas, onion, corn, rice, thyme, garlic salt, and cayenne; stir-fry until heated through, 3 to 4 minutes. Add spinach and stir-fry until it begins to wilt, 1 to 2 minutes.
