Ingredients for - Summer Minestrone Salad

1. Bear Creek® Minestrone Soup Mix - 1 package
2. Water - 5 cups
3. Green Giant® Whole Kernel Sweet Corn - 2 cups
4. Chickpeas, rinsed and drained - 1 (14 ounce) can
5. Red wine vinegar - 2 tablespoons
6. Chopped green onions - 3
7. Chopped fresh parsley - 3 tablespoons

How to cook deliciously - Summer Minestrone Salad

1. Stage

Bring water to a boil. Stir in soup mix and simmer 11 minutes; remove from heat (vegetables and pasta will still be firm).

2. Stage

Stir in corn, chickpeas, and vinegar. Let sit for 15 minutes.

3. Stage

Stir in remaining ingredients.

4. Stage

Serve warm, room temperature, or chilled.
