1. Vital wheat gluten - 1 ½ cups
2. Nutritional yeast - ¼ cup
3. Hungarian paprika - 2 teaspoons
4. Whole mustard seeds - 1 ½ teaspoons
5. Salt - 1 ¼ teaspoons
6. Ground black pepper - 1 teaspoon
7. Garlic powder - 1 teaspoon
8. Onion Powder - 1 teaspoon
9. Ground cumin - ¼ teaspoon
10. Cayenne pepper, or more to taste - ⅛ teaspoon
11. Water - ½ cup
12. Tomato sauce - ⅓ cup
13. Olive oil - 2 tablespoons
14. Vegetarian Worcestershire sauce - 2 tablespoons
15. Liquid aminos (such as Bragg®) - 1 tablespoon
16. Pure maple syrup - 1 tablespoon
17. Liquid smoke flavoring - 1 teaspoon

How to cook deliciously - Spicy Seitan Summer Sausage

1. Stage

Preheat the oven to 325 degrees F (165 degrees C).

Mix vital wheat gluten, yeast, paprika, mustard seeds, salt, pepper, garlic powder, onion powder, cumin, and cayenne together in a large bowl.

Mix water, tomato sauce, oil, Worcestershire, liquid aminos, maple syrup, and liquid smoke together in a medium bowl. Pour wet ingredients into dry ingredients. Knead for 5 minutes with an electric mixer or by hand.

Shape into a 6- to 8-inch log. Wrap tightly in aluminum foil, twisting the ends.

Bake in the preheated oven until a toothpick inserted into the center comes out clean, 1 1/2 to 2 hours. Remove from oven and unwrap from foil. Slice and serve.
