Ingredients for - Tropical Quinoa Salsa Salad

1. Water - 1 ½ cups
2. Quinoa - ¾ cup
3. Cubed seeded watermelon - 1 ⅓ cups
4. Sliced red bell pepper - 1 cup
5. Sliced cucumber - 1 cup
6. Sliced red onion - ¾ cup
7. Mango - peeled, seeded, and chopped - 1 small
8. Drained pineapple tidbits, juice reserved - ¼ cup
9. Cilantro leaves, chopped, a few leaves reserved for garnish - 1 bunch
10. Dressing: - 1 bunch
11. White wine vinegar - 3 tablespoons
12. Honey - 3 tablespoons
13. Reserved pineapple juice from the can - 2 tablespoons
14. Lime juice - 2 tablespoons
15. Garlic, minced - 3 cloves
16. Canola oil - ¼ cup
17. Salt and ground black pepper to taste - ¼ cup
18. Lime - 4 slices
19. Jalapeno pepper, thinly sliced - 1

How to cook deliciously - Tropical Quinoa Salsa Salad

1. Stage

Bring water and quinoa to a boil in a saucepan; reduce heat to medium-low, cover, and simmer until quinoa is tender and water has been absorbed, about 15 minutes. Refrigerate until cold, about 1 hour.

2. Stage

Stir cooled quinoa, watermelon, bell pepper, cucumber, red onion, mango, pineapple, and chopped cilantro leaves together in a large bowl.

3. Stage

Whisk wine vinegar, honey, pineapple juice, lime juice, and garlic together in a small bowl; drizzle in canola oil, whisking constantly. Pour dressing over quinoa mixture; toss gently to combine. Place salad in a serving bowl; garnish with lime slices, jalapeno slices, and reserved cilantro leaves.
