1. Vegetable oil - 2 tablespoons
2. Firm tofu, drained - 1 (12 ounce) package
3. Canned fire-roasted tomatoes, drained - ¾ cup
4. Red bell pepper, diced - 1 medium
5. Yellow onion, diced - ½ medium
6. Garlic, minced - 2 cloves
7. Nutritional yeast - 1 ½ tablespoons
8. Soy sauce - 1 ½ tablespoons
9. Red pepper flakes - ½ teaspoon
10. Paprika - ½ teaspoon
11. Ground turmeric - ¼ teaspoon
12. Salt to taste - 1 pinch
13. Vegan mayonnaise, or to taste - 1 tablespoon
14. Sandwich buns, split - 5
15. Fresh spinach - 1 cup
16. Avocado, sliced - 1

How to cook deliciously - Vegan Tofu Scramble Breakfast Sandwiches

1. Stage

Heat oil in a large pan over medium heat. Crumble tofu into roughly 1-inch pieces and add to the pan. Cook, stirring occasionally, for 5 minutes. Add canned tomatoes and cook until excess liquid has evaporated, 5 to 10 minutes. Add bell pepper and onion and cook until onion is translucent, about 5 minutes. Add garlic, nutritional yeast, soy sauce, red pepper flakes, paprika, turmeric, and salt. Cook and stir for 2 minutes more.

Spread mayonnaise over sandwich buns and top with tofu mixture, spinach, and avocado.
