1. Olive oil - 3 tablespoons
2. Onions, chopped - 3 medium
3. Green bell peppers, chopped - 2
4. Carrot, diced - 1
5. Celery, diced - 1 stalk
6. Garlic, minced - 6 cloves
7. Ground cumin - 3 tablespoons
8. Chili powder - 1 teaspoon
9. Crushed tomatoes - 1 (28 ounce) can
10. Green chile peppers, seeded and minced - 10
11. Vegetable broth - 8 cups
12. Chickpeas, drained - 1 (15 ounce) can
13. Quinoa - ½ cup
14. Salt and ground black pepper to taste - ½ cup
15. Frozen corn, thawed - 1 ½ cups
16. Avocado - peeled, pitted, and diced - 1

How to cook deliciously - Vegetable Soup with Quinoa

1. Stage

Heat oil in a large stock pot over medium heat. Stir in onions, bell peppers, carrot, celery, garlic, cumin, and chili powder. Cook until vegetables are tender, about 10 minutes.

Mix in crushed tomatoes and green chile peppers. Pour in broth, chickpeas, and quinoa. Season with salt and pepper. Bring to a boil; reduce heat to low and simmer for 30 minutes.
