1. Cooking spray
2. Boneless pork loin roast 1 (2 pound)
3. Salt and ground black pepper to taste 1 (2 pound)
4. Sauerkraut, drained and rinsed 1 (32 ounce) jar
5. Light beer ½ (12 fluid ounce) can or bottle
6. Lightly packed brown sugar ¼ cup
7. Onion, diced 1 small
8. Butter, or more to taste, cut into small pieces 1 tablespoon

1 . Stage

Prepare the crock of a five-quart slow cooker with cooking spray.

2 . Stage

Season roast with salt and pepper; lay in the prepared slow cooker crock.

3 . Stage

Spread sauerkraut over and around the roast. Pour beer over the sauerkraut. Sprinkle brown sugar evenly over the sauerkraut; top with onion and dot with butter. Season everything with salt and pepper.

4 . Stage

Cook on Low for 8 hours.
