1. Onion, cut into chunks 1 medium
2. Fresh cilantro leaves ¼ cup
3. Meatless ground beef substitute (such as Impossible(TM) Foods) 1 ½ (12 ounce) packages
4. Ground paprika 2 teaspoons
5. Greek seasoning 1 teaspoon
6. Ground cumin 1 teaspoon
7. Ground cinnamon 1 teaspoon
8. Cayenne pepper ¼ teaspoon
9. Salt and ground black pepper to taste ¼ teaspoon
10. Pita bread rounds, cut in half 4 (6 inch)
11. Shredded lettuce, or to taste ½ cup
12. Diced tomato, or to taste ¼ cup
13. Diced onion, or to taste 2 tablespoons
14. Tzatziki 8 tablespoons

How to cook deliciously - Vegetarian Kofta Pitas

1 . Stage

Preheat an outdoor grill to medium-high heat and lightly oil the grate.

Combine onion and cilantro in the bowl of a food processor; pulse until minced. Add ground beef substitute, paprika, Greek seasoning, cumin, cinnamon, cayenne, salt, and pepper; pulse until well combined. Form mixture into eight 4x2-inch patties.

Cook patties on the preheated grill until no longer pink in the center, 7 to 8 minutes per side. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C).

Fill each pita half with shredded lettuce, diced tomato, diced onion, 1 tablespoon tzatziki, and a cooked patty.
