4. Chopped fresh cilantro - ¼ cup
5. Sliced green onion - 3 tablespoons
6. Makrut lime leaves - 10
7. Skinless, boneless chicken breasts, cut into 2-inch pieces - 3 pounds
8. Fish sauce - ¼ cup
9. White sugar - 1 tablespoon
10. Red pepper flakes - ½ teaspoon
11. Coconut milk - 3 (14 ounce) cans
12. Shiitake mushrooms, sliced - 1 (8 ounce) package
13. Cremini mushrooms, sliced - 1 (8 ounce) package

1. Stage

Bring chicken stock to a boil in a saucepan; add lemon grass, galangal, cilantro, green onion, and lime leaves. Stir, reduce heat, and simmer for 5 minutes.

Mix chicken, fish sauce, sugar, and red pepper flakes into stock mixture; stir and simmer for 5 minutes. Add coconut milk, shiitake mushrooms, and cremini mushrooms; stir and simmer for 5 minutes.
