7. Skinless, boneless chicken breasts, cut into 2-inch pieces 3 pounds
8. Fish sauce ¼ cup
9. White sugar 1 tablespoon
10. Red pepper flakes ½ teaspoon
11. Coconut milk 3 (14 ounce) cans
12. Shiitake mushrooms, sliced 1 (8 ounce) package

1 . Stage

Bring chicken stock to a boil in a saucepan; add lemon grass, galangal, cilantro, green onion, and lime leaves. Stir, reduce heat, and simmer for 5 minutes.
