I made the streusel in advance. I made the cupcakes in the evening and baked them in the morning. For the streusel I mixed the flour and cold butter into a crumb.

Then I added the coconut flakes and sugar. Blended until smooth. I covered it with a bag and put it in the refrigerator.

In the morning I grated 2 apples and added 2 tablespoons of sugar. Set it aside.

While the apples are resting, let's make the dough. Let's combine the dry ingredients: Sifted flour, baking soda, remaining sugar and vanilla sugar.

Separately, combine: beaten with a fork egg, kefir and vegetable oil. I did it in a jar. An ordinary half-liter jar...

Pour the liquid mixture into the dry mixture a little at a time and mix everything well until homogeneous. Remember about the apples. They need to be strained of excess liquid through a sieve. Add the apples to the batter and the coconut shavings.
7 . Stage
Place the dough in the molds (I have iron molds with paper molds, some with parchment). Sprinkle the streusel on top.
8 . Stage
Bake in preheated oven at 180 degrees for 15 minutes on lower heat with convection and another 5-10 minutes on higher heat. Remove from the iron molds and leave the paper molds.
