Ingredients for - Apricot Glazed Carrots

1. Carrots, peeled and diagonally sliced 2 pounds
2. Butter, melted 3 tablespoons
3. Apricot preserves ⅓ cup
4. Ground nutmeg ¼ teaspoon
5. Salt ¼ teaspoon
6. Orange zest 1 teaspoon
7. Fresh lemon juice 2 teaspoons
8. Chopped fresh parsley for garnish 2 teaspoons

How to cook deliciously - Apricot Glazed Carrots

1 . Stage

Add carrots to a pot of lightly salted water, and bring to a low boil. Simmer until carrots are tender. Drain.

2 . Stage

Put melted butter in a bowl, and stir in apricot preserves. Stir in nutmeg, salt, orange zest, and lemon juice. Add carrots, and stir well to coat. Sprinkle with chopped parsley.
