Ingredients for - Apricot Glazed Carrots

1. Carrots, peeled and diagonally sliced - 2 pounds
2. Butter, melted - 3 tablespoons
3. Apricot preserves - ⅓ cup
4. Ground nutmeg - ¼ teaspoon
5. Salt - ¼ teaspoon
6. Orange zest - 1 teaspoon
7. Fresh lemon juice - 2 teaspoons
8. Chopped fresh parsley for garnish - 2 teaspoons

How to cook deliciously - Apricot Glazed Carrots

1. Stage

Add carrots to a pot of lightly salted water, and bring to a low boil. Simmer until carrots are tender. Drain.

2. Stage

Put melted butter in a bowl, and stir in apricot preserves. Stir in nutmeg, salt, orange zest, and lemon juice. Add carrots, and stir well to coat. Sprinkle with chopped parsley.
