1. Potatoes, peeled and cubed 5 pounds

2. Sour cream 1 cup

3. Butter ½ cup

4. Grated Parmesan cheese ½ cup

5. Cream cheese, softened 6 ounces

6. Extra-sharp Cheddar cheese, shredded 4 ounces

7. Green onions, chopped 4 stalks

8. Salt 1 teaspoon

1 . Stage

Place potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, 15 to 20 minutes.

While the potatoes are cooking, preheat the oven to 350 degrees F (175 degrees C).
