1. c. pine nuts
2. 1/4 c. extra-virgin olive oil
3. 2 tbsp. extra-virgin olive oil
4. 3 tbsp. white wine vinegar
5. 1 small shallot
6. Salt
7. Freshly ground pepper
8. 4 c. Thyme-Scented Pearled Barley
9. 1 large tart apple
10. 1/2 c. pomegranate seeds
11. 1/2 c. Chopped flat-leaf parsley

1 . Stage

Preheat the oven to 350 degrees F. Spread the pine nuts in a pie plate and toast until golden, about 5 minutes. Let cool.
