2. Quinoa - 2 cups
3. Halved grape tomatoes - 1 cup
4. Chopped fresh parsley - ¾ cup
5. Sliced pitted kalamata olives - ½ cup
6. Minced red onion - ½ cup
7. Chopped feta cheese, or more to taste - 4 ounces
8. Olive oil - 3 tablespoons
9. Red wine vinegar - 3 tablespoons
10. Garlic, minced - 2 cloves
11. Lemon, halved - 1
12. Salt and ground black pepper to taste - 1

1. Stage

Bring broth and quinoa to a boil in a saucepan. Reduce heat to medium-low, cover, and simmer until quinoa is tender and water has been absorbed, 15 to 20 minutes. Transfer quinoa to a large bowl and set aside to cool, about 10 minutes.
