1. Black-eyed peas - 2 (15.5 ounce) cans
2. Tomato, chopped - 1 large
3. Red bell pepper, chopped - 1 medium
4. Green bell pepper, chopped - 1 medium
5. Red onion, diced - ½
6. Celery, chopped - 1 stalk
7. Chopped fresh parsley - 1 tablespoon
8. Balsamic Vinegar - 3 tablespoons
9. Olive oil - 2 tablespoons
10. Salt and pepper to taste - 2 tablespoons

How to cook deliciously - Black-Eyed Pea Salad

1. Stage

In a medium bowl, toss together black-eyed peas, tomato, red bell pepper, green bell pepper, red onion, celery, and parsley.

2. Stage

In a small bowl, mix balsamic vinegar and olive oil. Season with salt and pepper. Toss into the vegetables. Cover, and chill in the refrigerator 8 hours, or overnight.
