2. All-purpose flour - 2 cups
3. Zucchini, cut into 1/2 inch slices - 2 large
4. Margarine - ¾ cup
5. Salt and pepper to taste - ¾ cup

1. Stage

Place beaten eggs in a bowl. Place flour on a dish. Dip zucchini in the eggs, then dredge in the flour to coat.

Melt margarine in a large skillet over medium heat. Fry the coated zucchini slices in the margarine until lightly browned. Season with salt and pepper.
