Ingredients for - Cafeteria Carrot Souffle

1. Carrots, chopped - 2 pounds
2. Melted butter - ½ cup
3. White sugar - 1 cup
4. All-purpose flour - 3 tablespoons
5. Baking powder - 1 teaspoon
6. Vanilla extract - 1 teaspoon
7. Eggs, beaten - 3
8. Confectioners' sugar for dusting - 1 teaspoon

How to cook deliciously - Cafeteria Carrot Souffle

1. Stage

Preheat the oven to 350 degrees F (175 degrees C).

2. Stage

Bring a large pot of salted water to a boil. Add carrots and cook until tender, about 15 minutes. Drain and mash. To the carrots add melted butter, white sugar, flour, baking powder, vanilla extract and eggs. Mix well and transfer to a 2 quart casserole dish.

3. Stage

Bake in the preheated oven for 30 minutes. Dust with confectioners' sugar.
