Ingredients for - Caldo Verde (Portuguese Green Soup)

1. Olive oil, divided 4 tablespoons
2. Onion, minced 1 medium
3. Garlic, minced 1 clove
4. Potatoes, peeled and thinly sliced 6 medium
5. Cold water 2 quarts
6. Linguiça sausage, thinly sliced 6 ounces
7. Kosher salt 2 ½ teaspoons
8. Ground black pepper to taste 2 ½ teaspoons
9. Kale, rinsed and julienned 1 pound

How to cook deliciously - Caldo Verde (Portuguese Green Soup)

1 . Stage

Heat 3 tablespoons oil in a large saucepan over medium heat. Add onion and garlic and cook for 3 minutes. Add potatoes and cook, stirring constantly, for 3 minutes. Pour in water and bring to a boil; boil gently until potatoes are very tender, about 20 minutes.

2 . Stage

Meanwhile, cook sausage in a large skillet over medium-low heat until it has released most of its fat, about 10 minutes. Drain.

3 . Stage

Use an immersion blender to purée potato mixture. Stir in sausage and season with salt and pepper. Increase the heat to medium, cover, and simmer for 5 minutes.

4 . Stage

Stir in kale and simmer until tender and bright green, about 5 minutes. Stir in remaining 1 tablespoon olive oil and serve immediately.
