2. 1 avocado -
3. 1 tsp. lime zest -
4. 1/4 c. lime juice -
5. 2 tbsp. water -

8. 1 tbsp. vegetable oil -
9. 1 lb. shrimp -
10. 3 hearts romaine lettuce -
11. 1/2 c. pepitas (pumpkin seeds) -
12. 1/2 c. fresh cilantro leaves -

1. Stage

In a blender, combine buttermilk, avocado, lime zest and juice, and 2 tablespoons water. Blend until smooth, 20 seconds. Season dressing to taste with salt and pepper. In a large skillet, heat oil over medium-high. Season shrimp with salt and pepper. Cook until opaque throughout, about 3 minutes, flipping once.
