1. 1 pound uncooked fettuccine -
2. 2 tablespoons butter -
3. 4 garlic cloves, minced -
4. 1 tablespoon all-purpose flour -
5. 1 cup half-and-half cream -
6. 1/2 cup vodka -
7. 1/4 cup lemon juice -
8. 1/2 cup grated Parmesan cheese -
9. 1/2 teaspoon salt -
10. 1/4 teaspoon pepper -
11. Grated Parmesan and freshly cracked black pepper, for serving -

How to cook deliciously - Christmas Fettuccine

1. Stage

Cook the pasta according to the package directions. When done, drain and reserve at least 1/4 cup pasta water for later. While the pasta is cooking, prepare the sauce.

2. Stage

In a large skillet, melt the butter over medium heat. Add the garlic and flour and cook until browned, one to two minutes. Slowly add the half-and-half, about 1/4 cup at a time, whisking to incorporate after each addition. Whisk in the vodka and lemon juice and simmer until thickened, four to five minutes. Add the Parmesan cheese, salt and freshly ground black pepper. Stir to melt the cheese and combine.

3. Stage

Add the cooked fettuccine to the pan and toss with the sauce. Slowly add some of the reserved pasta water, up to 1/4 cup, to thin out the sauce to the desired consistency. Serve the pasta with additional freshly grated Parmesan cheese and twists of freshly ground black pepper as desired.
