How to cook deliciously - Copycat Starbucks Egg Bites

1. Stage

Arrange an oven rack at the lowest rack setting, then place a second rack on the middle level of the oven. Place an oven-safe skillet on the bottom oven rack and preheat the oven and skillet to 300°F. Meanwhile, bring 2 cups of water to a boil.

In a blender, puree the eggs, cottage cheese, salt and pepper until smooth, about 20 seconds. Editor's Tip: If you don't want to use a blender, a hand mixer or a whisk and some elbow grease will do.

Line six muffin cups with foil liners, divide the Swiss cheese and bacon among them and pour the egg mixture over the top. Editor's Tip: Silicone egg or muffin molds are great for making egg bites in the oven; just spritz them with cooking spray and forget the liners.

Wearing oven mitts, place your muffin tin on the top rack. Pull the bottom rack out 6 to 8 inches and add boiling water to the skillet. (Work quickly and carefully, pouring water away from you. Don't worry if there's some water left in the saucepan.) Carefully slide the bottom rack back into place and quickly close the door to trap the steam in the oven. Editor's Tip: The steam helps the eggs cook up nice and fluffy. While you can skip the water step, it adds the softest texture to baked egg bites.

5. Stage

Bake until the eggs puff and are cooked to your desired degree of doneness, 25 to 30 minutes. Serve them immediately.
