1. Stage
In a large bowl, combine first 4 ingredients (mixture will be thick and sticky). Roll mixture into 1-in. balls. Place on parchment-lined baking sheets. Freeze until firm, 30-45 minutes.

Combine chocolate chips and shortening in a microwave-safe bowl. In a microwave, melt chocolate mixture; stir until smooth. Dip cookies into chocolate; allow excess to drip off. Return to parchment-lined baking sheets; let stand until set. Store cookies in refrigerator.
