1. Beets, peeled and cut into 1-inch pieces - 4 medium
2. Extra-virgin olive oil, plus more for drizzling - ¼ cup
3. Sea salt to taste - ¼ cup
4. Lemon - ½ medium
5. Chopped green onion, green parts only - ½ cup
6. Goat cheese, crumbled - 6 ounces

1. Stage

Preheat the oven to 375 degrees F (190 degrees C).

Toss chopped beets with olive oil and sprinkle with salt. Spread out in a single layer in a baking dish and squeeze lemon half over top. Cover baking dish tightly with aluminum foil.
