1. Lime, juiced - 1
2. Olive oil - 2 tablespoons
3. Chili powder - ½ teaspoon
4. Cumin - ½ teaspoon
5. Salt and ground black pepper to taste - ½ teaspoon
6. Skinless, boneless chicken breasts - 2 large
7. Torn romaine lettuce - 4 cups
8. Mixed baby greens - 2 cups
9. Corn kernels - 2 cups
10. Shredded sharp Cheddar cheese - 1 cup
11. Canned black beans, rinsed - ½ cup
12. Cucumber, diced - ½
13. Ranch dressing - ½ cup
14. Chunky salsa - ¾ cup
15. Finely chopped cilantro - 1 tablespoon
16. Crushed taco chips - 1 cup

How to cook deliciously - Fiesta Grilled Chicken Salad

1. Stage

Mix lime juice, olive oil, chili powder, cumin, salt, and black pepper together in a resealable plastic bag along with the chicken breasts. Marinate in the refrigerator at least 1 hour to overnight.

Preheat an outdoor grill for medium heat and lightly oil the grate.

Cook chicken on the preheated grill until juices no longer run pink, about 5 minutes per side. Allow to cool for about 5 minutes; roughly chop and refrigerate.

Toss romaine lettuce, baby greens, corn, Cheddar cheese, black beans, and cucumber together in a large bowl. Set aside.
