1. 1-1/2 pounds boneless skinless chicken breasts, cut into 1/2-inch cubes -
2. 1 medium yellow summer squash, chopped -
3. 1 medium onion, chopped -
4. 1 medium carrot, chopped -
5. 2 tablespoons butter -
6. 3 cups fresh baby spinach -
7. 1 garlic clove, minced -
8. 1/2 teaspoon salt -
9. 1/2 teaspoon dried thyme -
10. 1/4 teaspoon pepper -
11. 1 cup uncooked instant brown rice -
12. 1-1/4 cups water -
13. 1 tablespoon lemon juice -

How to cook deliciously - Garden Vegetable & Chicken Skillet

1. Stage

In a large skillet, saute the chicken, squash, onion and carrot in butter for 5-6 minutes or until chicken is no longer pink; drain. Add the spinach, garlic, salt, thyme and pepper; cook 2 minutes longer.

2. Stage

Stir in rice and water. Bring to a boil. Reduce heat; cover and simmer for 10-15 minutes or until rice is tender. Stir in lemon juice.
