Ingredients for - Ginger Miso Carrot Soup

1. 1 tbsp. butter -
2. 1 tbsp. olive oil -
3. 1 small onion, chopped -
4. 2 medium shallots, minced -
5. 2 tsp. freshly grated ginger -
6. 1 1/2 tsp. ground allspice -
7. 2 lb. carrots, peeled and sliced into ¼" thick rounds -
8. 4 c. vegetable broth or water -
9. 1/4 c. white miso paste -
10. 1 tbsp. lime juice  -
11. Toasted sesame oil, for garnish -
12. 2 green onions, thinly sliced -
13. Black and white sesame seeds, for garnish -

How to cook deliciously - Ginger Miso Carrot Soup

1. Stage

In a large pot over medium heat, combine butter and olive oil. When butter has melted, add onion and shallots, and cook until soft, 6 minutes.

2. Stage

Add ginger and allspice and cook until fragrant, 1 minute more. Add carrots and water or vegetable broth and bring to a boil. Reduce to a simmer and cover. Cook until carrots are tender, 25 to 30 minutes.

Using a blender or immersion blender, blend soup until smooth. Place miso in a medium bowl and pour about ½ cup of hot soup over miso. Whisk until miso is fully incorporated, transfer back to the pot with the rest of the soup, and stir to combine. Taste for seasoning and add more salt if needed.

4. Stage

Stir in lime juice and divide soup into bowls. Top each bowl with a drizzle of sesame oil, some green onions, and a pinch of sesame seeds.
