1. Dry black beans 1 pound
2. Chicken broth 4 cups
3. Diced tomatoes in juice 1 (14 ounce) can
4. Carrots, peeled and finely chopped 2
5. Onion, chopped 1 large
6. Red bell pepper, chopped 1
7. Minced garlic, or more to taste 2 teaspoons
8. Ground cumin 2 teaspoons
9. Salt 2 teaspoons
10. Chili powder 2 teaspoons
11. Chopped jalapeno pepper, or more to taste (Optional) 1 teaspoon
12. Ground black pepper, or more to taste 1 teaspoon
13. Canned corn, drained 1 cup
14. Brown sugar ¼ cup

1 . Stage

Sort black beans and place into a large container. Cover with several inches of cool water; let soak, 8 hours to overnight. Rinse and drain.

2 . Stage

Combine black beans, chicken broth, tomatoes, carrots, onion, red bell pepper, garlic, cumin, salt, chili powder, jalapeno, and black pepper in a slow cooker.

3 . Stage

Cover and cook on High until mixture has reduced and beans are tender, about 8 hours. Stir in corn and brown sugar 1 hour before serving.
