Ingredients for - Greek Quesadillas
1. 1 c. Greek yogurt -
2. 1/2 cucumber, finely chopped -
3. 1 tbsp. chopped dill -
4. Juice of 1/2 a lemon, plus more if desired -
9. 4 large pitas, halved -
13. 1/2 c. roasted red peppers, drained -
14. 1/2 c. coarsely chopped Kalamata olives -
15. 1 tbsp. chopped dill -
How to cook deliciously - Greek Quesadillas
1. Stage
Make the sauce: In a medium bowl, stir together Greek yogurt, cucumber, dill, and lemon juice. Season to taste with salt, pepper and red pepper flakes.
2. Stage
In a large skillet over medium heat, heat olive oil. Add one pita half, cut-side up. Top with a handful each of mozzarella and chicken. Sprinkle with feta, red peppers, olives and dill. Top with the matching pita half, cut-side down.
3. Stage
Cook until the cheese is melted and the bottom pita is golden, about 2 minutes. Carefully flip and continue to cook until the second side is golden, about 2 minutes more.
4. Stage
Repeat with remaining ingredients. Cut quesadillas into wedges and serve warm with Tzatziki sauce.
