How to cook deliciously - Grilled Kielbasa Dogs with Chili-Lime Potato Salad
1. Stage
In a large pot place potatoes in cold water and bring to a boil. Season with salt and stir. Simmer until fork tender, 10 minutes.
2. Stage
Preheat grill or grill pan. Meanwhile, in a large bowl mix mayonnaise, cilantro, salt, pepper, lime juice and zest, and red pepper flakes. Drain and run under cold water until cooled. Toss potatoes with dressing.
3. Stage
Cut kielbasa in half, and again in half lengthwise into 4 equal pieces. Grill kielbasa for 2 minutes on each side. Transfer to a plate and let rest for one minute.
4. Stage
Serve kielbasa on hot dog buns with a side of potato salad; garnish with cilantro. If desired, drizzle dressing from potato salad on kielbasa and top with cilantro, or serve with your favorite condiment.
