Ingredients for - Grilled Sea Bass with Chili-Lime Dressing

1. Garlic, finely minced, or more to taste - 1 clove
2. Lime, zested - 1
3. Seasoned rice vinegar - 2 tablespoons
4. Asian fish sauce - 2 tablespoons
5. Lime juice - 2 tablespoons
6. Asian chile pepper sauce (such as sambal oelek) - 1 tablespoon
7. Asian (toasted) sesame oil - 1 teaspoon
8. Sea bass - 4 (4 ounce) fillets
9. Vegetable oil, or as needed - 2 teaspoons
10. Salt to taste - 2 teaspoons
11. Coarsely chopped cilantro leaves, or to taste - 1 tablespoon

How to cook deliciously - Grilled Sea Bass with Chili-Lime Dressing

1. Stage

Preheat an outdoor grill for high heat and lightly oil the grate.

2. Stage

Whisk garlic, lime zest, rice vinegar, fish sauce, lime juice, chile pepper sauce, and sesame oil in a glass bowl.

3. Stage

Brush both sides of sea bass fillets with vegetable oil and sprinkle lightly with salt.

4. Stage

Cook on the preheated grill until fish is opaque, shows good grill marks, and springs back when pressed lightly, 3 to 4 minutes per side. Transfer fillets to a serving platter.

5. Stage

Whisk dressing again; taste and and adjust seasoning. Drizzle dressing over warm fish. Sprinkle fillets with cilantro leaves. Jeff Keay
