Ingredients for - Healthy Coconut Oatmeal

1. Plain or vanilla soy milk - 3 ½ cups
2. Salt - ¼ teaspoon
3. Rolled oats - 2 cups
4. Pure maple syrup - ¼ cup
5. Raisins - ⅓ cup
6. Dried cranberries - ⅓ cup
7. Sweetened flaked coconut - ⅓ cup
8. Chopped walnuts - ⅓ cup
9. Plain yogurt (Optional) - 1 (8 ounce) container
10. Honey (Optional) - 3 tablespoons

How to cook deliciously - Healthy Coconut Oatmeal

1. Stage

Pour the milk and salt into a saucepan, and bring to a boil. Stir in the oats, maple syrup, raisins, and cranberries. Return to a boil, then reduce heat to medium. Cook for 5 minutes. Stir in walnuts and coconut, and let stand until it reaches your desired thickness. Spoon into serving bowls, and top with yogurt and honey, if desired.
