Ingredients for - Jazzy New Orleans Chicken

1. Whole chicken, skin removed and cut into pieces - 1 (3 pound)
2. All-purpose flour - ⅓ cup
3. Vegetable oil - 1 tablespoon
4. Smoked sausage - ½ pound
5. Garlic, minced - 2 cloves
6. Onion, chopped - 1
7. Red bell peppers, chopped - 2
8. Roma (plum) tomatoes, chopped - 3
9. Brown sugar - 1 teaspoon
10. Dried thyme - ¾ teaspoon
11. Dried oregano - ¾ teaspoon
12. Salt - ½ teaspoon
13. Ground allspice - ¼ teaspoon
14. Long-grain white rice - 1 ½ cups
15. Chicken stock - 2 ¼ cups
16. Chopped fresh parsley, for garnish - 1 tablespoon
17. Lemon - sliced, for garnish - 1

How to cook deliciously - Jazzy New Orleans Chicken

1. Stage

Dredge chicken in flour, turning to coat all over.

2. Stage

In large saucepan or Dutch oven, heat oil over medium heat. Brown chicken pieces about 8 minutes per side. Transfer to plate.

Combine sausage, garlic, onion, peppers, tomatoes, sugar, thyme, oregano, salt, and allspice in the pan. Cook over medium heat, stirring occasionally, for 10 minutes or until peppers are softened.

4. Stage

Stir in rice, and add stock. Nestle chicken into rice. Bring to a boil. Reduce heat, and cover. Cook for 20 to 25 minutes, or until liquid is absorbed and juices run clear when chicken is pierced. Serve sprinkled with parsley. Garnish with lemon slices if you like.
