Ingredients for - Jicama Corn Salad

1. Frozen corn kernels, thawed 4 cups
2. Jicama, peeled and diced 2 pounds
3. Mangos - peeled, seeded, and diced 4 medium
4. Chopped red onion 1 cup
5. Chopped fresh cilantro ½ cup
6. Lime juice ½ cup
7. Salt and pepper to taste ½ cup

In a large serving bowl, combine the corn kernels, jicama, mango, red onion and cilantro. Pour the lime juice over, and season with salt and pepper. Toss until well blended.
