1. 1 tsp. olive oil -
2. 1/4 lb. cooked kielbasa -
3. 1 large onion -
4. 3 1/2 c. chicken stock -
5. 1 large potato -
6. 1 stalk celery -
7. 1 tsp. white wine vinegar -
8. 1/2 tsp. dried thyme leaves -
9. 1/4 tsp. lemon pepper -
10. Salt to taste -
11. 1/4 c. diced roasted red peppers for garnish -

How to cook deliciously - Kielbasa with Roasted Pepper Soup

1. Stage

Heat the oil in a 6-quart pot over medium-high heat for 1 minute. Add the kielbasa and onion and sauté until the onion begins to brown, about 6 minutes. Add the stock, potato, celery, vinegar, thyme, and lemon pepper.

2. Stage

Cover and bring to a boil. Reduce the heat and simmer until the vegetables are tender, about 15 minutes. Taste and season with salt if needed. Top each serving with red peppers.
