Let's take 500 grams of cottage cheese. This time I have a diet version of 2% fat, in a briquette. But it doesn't matter. You can make great dumplings out of homemade cottage cheese. Grain cheese, in my opinion, won't work here.

Add the egg and sugar.

Knead and stir everything with a fork, add the semolina and flour... If desired, the flour and semolina can be replaced with the same amount of rice flour. Stir again. Do not make a stiff dough, let it stay sticky.

A little tip: cover our dough with cling film and put it in the freezer for about 10 minutes. Or another option: make the dough in the evening, put it in the fridge, and make breakfast in the morning very quickly. The dough will stay in the freezer for a while, and we won't need to add extra flour.

I put a spoonful of flour on a plate - just dust my hands with it, form a dough, put a cherry inside (without a seed, just frozen), and seal it on top, make a ball.

Boil water, salt a little, put our prepared dumplings in it.

I took it off on purpose - the dumplings float to the top when ready. Cooking time - literally 5 minutes at an active boil.

That's how we got the balls. Larger than usual, but otherwise the cherry wouldn't fit. You can use any berry you like.
