1. 1/3 cup chopped red onion -
2. 1/2 cup chopped sweet red or chopped green pepper -
3. 1 celery rib, chopped -
4. 1 tablespoon olive oil -
5. 1 cup cubed cooked pork (1/2-inch cubes) -
6. 3/4 cup frozen sliced carrots, thawed -
7. 1 jar (4-1/2 ounces) sliced mushrooms, drained -
8. 1/2 cup pork gravy -
9. 1/3 cup chicken broth -
10. 2 tablespoons soy sauce -
11. 1/8 teaspoon pepper -
12. Hot cooked rice -

How to cook deliciously - Leftover Pork

1. Stage

In a skillet, saute the onion, pepper and celery in the olive oil until they're crisp-tender.

2. Stage

Add the pork, carrots, mushrooms, gravy, broth, soy sauce and pepper, then bring the liquid to a boil. Reduce the heat, then cover the skillet and let the dish simmer for 20 to 25 minutes or until the carrots are tender. Serve the pork mixture over warm rice.
