Ingredients for - Maple Bacon Cornish Hen

1. 1 Tyson Cornish Hen  -
2. Kosher salt -
3. Freshly ground black pepper -
4. 8 pieces bacon   -
5. 2 sweet potatoes, medium size  -
6. 1/3 c. maple syrup  -
7. 1 1/2 tbsp. dijon mustard   -
8. 1 1/2 tsp. fresh thyme, plus more for cavity -
9. 1 mandarin orange, sliced -

How to cook deliciously - Maple Bacon Cornish Hen

1. Stage

Preheat oven to 425º and brush a medium sheet tray with olive oil.

2. Stage

In a medium bowl, whisk together maple syrup, mustard, and thyme. 

3. Stage

Prep the bird by removing anything from the cavity and season all over with salt and pepper. Stuff the cavity with thyme and mandarin orange. Brush the outside of the hen with glaze.

4. Stage

On prepared sheet tray, make a lattice with 8 slices of bacon. Brush glaze in the center of lattice. Place the hen breast side down on bacon and wrap it with the ends of the lattice, turn the hen over so that the lattice is breast side up. Brush more glaze over the top and reserve a bit for basting.

5. Stage

Cook at 425º for 20 minutes and then reduce oven temperature to 400º. Continue cooking for 60 minutes more, or until the top is golden and crisp and a thermometer inserted into the thickest part of the bird reads 165º. 

6. Stage

To roast with sweet potatoes: Cut 2 medium sweet potatoes into ½ inch discs and coat with olive oil and a pinch of salt and pepper. Add to sheet tray with the roasting hen for the last 20-25 minutes of baking time and remove when caramelized and cooked through.
