1. Olive oil, or to taste - 1 tablespoon
2. Yellow onion, diced - 1
3. Chopped carrots - 2 cups
4. Chopped celery - 2 cups
5. Garlic, minced, or more to taste - 2 cloves
6. Salt and ground black pepper to taste - 1 pinch
7. Unsalted chicken stock - 1 (32 ounce) carton
8. Water - 2 ½ cups
9. Browning sauce (such as Kitchen Bouquet®) - 2 teaspoons
10. Green cabbage, coarsely chopped - 1 head
11. Diced tomatoes - 1 (14.5 ounce) can
12. Louisiana-style hot sauce - 4 dashes
13. Bay leaf - 1
14. Cajun seasoning (such as Tony Chachere's), or to taste - 1 pinch

How to cook deliciously - Meatless Cajun Cabbage Soup

1. Stage

Heat oil in a large pot over medium-high heat. Add onion, carrots, and celery. Saute until vegetables are tender and starting to brown, about 5 minutes. Add garlic and cook until fragrant, about 1 minute. Season with salt and pepper. Pour in chicken stock, water, and browning sauce.

2. Stage

Bring soup to a boil; reduce heat to low. Add cabbage, diced tomatoes, hot sauce, bay leaf, and Cajun seasoning. Simmer until cabbage is tender and liquid is reduced by half, 25 to 30 minutes. Adjust seasoning as needed.
