1. Olive oil - 1 tablespoon
2. Diced onion - 1 cup
3. Diced carrot - ¾ cup
4. Sliced celery - ¾ cup
5. Minced garlic - 1 teaspoon
6. Minced fresh rosemary - 1 ½ teaspoons
7. CONTADINA® Tomato Sauce - 1 (15 ounce) can
8. Cannellini beans, rinsed and drained - 1 (15 ounce) can
9. Water - 2 ½ cups
10. College Inn® Chicken Broth - 2 cups
11. Diced zucchini - 1 cup
12. Dry ditalini pasta - ½ cup
13. Black pepper - ¼ teaspoon
14. Chopped fresh Italian parsley - ¼ cup
15. Shredded Parmesan cheese, or to taste - 1 tablespoon

How to cook deliciously - Classic Minestrone Soup

1. Stage

Heat oil in a large saucepan over medium-high heat. Sauté onion, carrot, celery, garlic, and rosemary until vegetables begin to soften, about 5 minutes.

2. Stage

Stir in tomato sauce, beans, water, broth, zucchini, pasta, and pepper; bring to a simmer. Cook, uncovered and stirring occasionally, until pasta is tender, 10 minutes. Stir in parsley. Serve topped with Parmesan and additional parsley if desired.
