1. Tofu - 1 (8 ounce) container
2. 1% milk, or more if needed - ⅓ cup
3. Salt, or to taste - ½ teaspoon
4. Pepper - ½ teaspoon
5. Frozen chopped spinach, thawed and drained - 1 (10 ounce) package
6. Shredded Cheddar cheese - ⅔ cup
7. Shredded Swiss cheese - ½ cup
8. Diced onion - ¼ cup
9. Minced garlic - 1 teaspoon
10. Unbaked pie crust - 1 (9 inch)

1. Stage

Preheat the oven to 350 degrees F (175 degrees C).

Blend tofu, milk, salt, and pepper in a blender until smooth, adding more milk if necessary.

Combine spinach, Cheddar, Swiss, onion, and garlic in a medium bowl. Add tofu mixture and mix until well combined; pour into pie crust.
