Ingredients for - Zesty Taco Casserole

1. Uncooked white rice - 1 cup
2. Water - 2 cups
3. Vegetable oil - 1 tablespoon
4. Onion, chopped - 1 large
5. Green bell pepper, chopped - 1 large
6. Red bell pepper, chopped - 1 large
7. Garlic, chopped - 2 cloves
8. Chopped green chile peppers - 1 (7 ounce) can
9. Salsa - 1 cup
10. Chili powder - 3 tablespoons
11. Ground cumin - 2 tablespoons
12. Dried oregano - 1 tablespoon
13. Cottage cheese - 2 cups
14. Whole kernel corn, drained - 1 (8.75 ounce) can
15. Vegetarian chili - 1 (15.25 ounce) can
16. Coarsely crushed corn chips - 2 cups
17. Shredded Cheddar cheese - ½ cup

How to cook deliciously - Zesty Taco Casserole

1. Stage

Combine rice and water In a saucepan, and bring to a boil. Reduce heat, cover, and simmer for 20 minutes. Preheat oven to 350 degrees F (175 degrees C).

2. Stage

Meanwhile, heat oil in a large skillet over medium heat. Cook onion, green bell pepper, red bell pepper, and garlic in oil until tender. In a medium bowl, combine chile peppers, salsa, chili powder, cumin, oregano, cottage cheese, corn, chili, and cooked rice. Stir this mixture in with the onions and peppers. Cook until heated through. Transfer to a 2 quart casserole dish, and top with chips and cheese. Use more or less cheese to taste.
